Sesame Mango Chicken (Clean Eating)

Ingredients
Rice:2 1/2 Cups Water2 Tsp Salsa (Add as much as you like I did more like 3 tbsp)1 Cup Brown RiceChicken:2 tbsp Sesame Seeds1 tsp Olive Oil1 Lb Boneless, skinless Chicken Breast4 Cloves of Garlic, minced1/4 tsp Ginger1/4 tsp fresh ground black pepper1 mango, peeled & diced3 medium on0the-vine tomatoes, choppedJuice from half a lime
Directions
1. Prepare rice according to pacakge directions, adding salsa at same time as water

2. Toast sesame seeds over low heat for 2-3 minutes over low heat until golden brown. Move to a plate and allow to cool

3. Pour olive oil into pan, swirl and add chicken . Sprinkle w/ garlic, giner and black pepper. Increase heat to medium and cook about 4 minutes, stir ocasionally.

4. Add diced mango to pan, spooning evenly over chicken. Saute mango for about 2 minutes stirring ocasionally. Add tomatoes and squeeze lime juice over top. Simmer for about 5 minutes, until tomato is hot and mango is juicy. Stir in sesame seeds and serve over rice.

    Great recipe! I chopped up the chicken to shorten cooking time, and threw in a large handful of chopped cilantro. And my mango was a dud so I used canned pineapple instead. All else according to the recipe. Delicious! - 8/29/11

    Mango isn' my favorite fruit, but when it's cooked - it's just to die for. No one in my family would finish this meal when I cooked it, so I'll be looking for different recipes with cooked mango! - 5/16/10

    This recipe turned out fantastic. I actually used the garlic and ginger (used fresh) and made a rough marinade out of it unintentionally.     I'm making this tonight and will review later. But the nutritional is incorrect as the recipe calls for 1 cup of uncooked rice, but the nutritional is for 1 cup of cooked rice. I just added another 1/2 cup of rice to my nutrition tracker to make up for it. I liked it. Next time I'll add more mango. - 5/7/12

    I haven't made this recipe yet but I have problems with the nutritional information. There's no way 1 lbs of chicken for 4 people only produces 7 grams of protein and 1 cup of dry rice is only 27 carbohydrates. As a recipe its fine, but as a nutritional guide its misleading - 7/27/11
