Southwestern Quesadillas

Ingredients
Directions
1 boneless, skinless chicken breast, cut into bite-size pieces2 tbsp. olive oil1/2 cup chopped red bell pepper1/4 cup chopped scallions2/3 cup frozen corn, thawed1/2 cup black beans, drained1/4 cup chopped spinach1 tbsp. chopped fresh parsley1 tsp. ground cumin1 tsp. chili powderdash saltdash cayenne pepper1.5 cup reduced fat shredded cheese5 10-inch flour tortillas
1. Grill or saute chicken until cooked and put aside.
2. In a non-stick skillet, add olive oil and heat.
3. Add pepper and scallions and saute until soft.
4. Add chicken, beans, corn, spinach and spices. Mix for approximately 4 minutes until spinach has separated and is well-mixed.
5. Add cheese and take off heat, stirring until it's all well-mixed.
6. You can heat your tortillas or not, this is optional.
Makes approximately five large quesadillas.

These sound delicious, but I agree...too many calories, fat and sat. fat for just one serving. By using cooking spray instead of olive oil, fat free cheese & whole wheat tortillas, it cuts the calories down to 295.4, the fat down to 3.5g and the sat. fat down to .7g per serving. Much healthier!! - 3/6/09
