Foil Pack Chicken

3 small boneless skinless chicken breasts1 pkg taco seasoning3 small red or golden potatoes6 T salsa3/4 cup shredded Mexican style cheese or sub3 T sour cream for topping
Preheat oven to 400 degrees. Lay out 3 large sheets of foil. Slice each potato thinly, and lay out one on each foil. Shake chicken in bag with taco seasoning, and place atop potatoes. Next, top with 2 T salsa on eah chicken, then 1/4 cup cheese on each.
Bring up foil sides and double fold and roll down. Bring up ends and double fold to seal. Place in a baking dish large enough to fit them all.
Bake for 30 to 35 minutes, until chicken is cooked through. Let stand 5 mins, then vent foil packet before opening. Serve with dollop of sour cream.

This recipe was very good and easy to make. After reading some of the comments here prior to trying it out I cooked the potatoes a little bit in the microwave first and I used Low sodium taco seasoning instead of regular and low fat sour cream.

OMG! in the beginning i was a little scepticale...but i loved it! I added a few baby carrots to each packet and only used 1/2 a package of taco seasoning & 1/2 a slice of kraft single yellow cheese for each. I added a small lettuce salad and 2 tbsp. of fat free 1000 island dressing. IT WAS O SO GOOD - 1/19/10

**update**
I make this on a regular basis, it is easy & quick. I've diced, quarted & juilene the potatoes.. juliene seems to work best. Still love this meal. Also up'd my rating! - 3/2/09

This was an awesome treat, and we will have it again at our table, our different take on it was, we use 6oz cauliflower per breast instead of potatoes to help cut some of the carb, and once done cooking in the foil, we put it in a small glass pryex dish, then added cheese and broiled it. YUMMY!! - 1/15/09

I really enjoyed this dish. I have made it several times now. One of my favorite variations was to use a spicy seasoning salt instead of the taco seasoning. It was easier when making only 1 or 2 servings. I found I was using a bit less, so that really helped to control the sodium content. - 1/14/09
