This recipe was very good and easy to make. After reading some of the comments here prior to trying it out I cooked the potatoes a little bit in the microwave first and I used Low sodium taco seasoning instead of regular and low fat sour cream.
Very Good --- will make it again! - 11/22/08

OMG! in the beginning i was a little scepticale...but i loved it! I added a few baby carrots to each packet and only used 1/2 a package of taco seasoning & 1/2 a slice of kraft single yellow cheese for each. I added a small lettuce salad and 2 tbsp. of fat free 1000 island dressing. IT WAS O SO GOOD - 1/19/10

I skipped the taco seasoning and tossed the breasts with my own spice medley (less sodium!) .... fast, easy, and oh so good! Will definitely make again. I love meals that practically make themselves!! :) - 10/29/09

This makes a great camp-out meal. We always to tin foil dinner's while there. This was a great alternative. It was by far the best we've done.
We just put the food in heavy duty foil. We then put the packets in some hot coals, on the side of the open fire pit at our campsite. - 8/31/09

I cooked this on our outdoor grill rather than the oven, since it was 92 degrees out! I did not pre-cook the potatoes & they came out great ~ the only change I might make when I make this again (& I will!) is I will add more salsa. My whole family enjoyed this ~ thank you! - 6/22/09

Very good and easy to make! The chicken was very moist and tasty My husband loved it. Next time I will microwave the sliced potatos a minute before I put them in the foil as they were a little hard when I cooked them the recomennded amout of time. - 6/4/09

Very easy and good, but my oven isn't consistent so I had to cook it much longer than recommended to get the potatoes done. Will definitely do this one again! Thanks for the recipe! - 5/13/09

This was an awesome treat, and we will have it again at our table, our different take on it was, we use 6oz cauliflower per breast instead of potatoes to help cut some of the carb, and once done cooking in the foil, we put it in a small glass pryex dish, then added cheese and broiled it. YUMMY!! - 1/15/09

I really enjoyed this dish. I have made it several times now. One of my favorite variations was to use a spicy seasoning salt instead of the taco seasoning. It was easier when making only 1 or 2 servings. I found I was using a bit less, so that really helped to control the sodium content. - 1/14/09

I've never understood foil wrapped food, except on a campfire or on a grill. Mostly because it seems all the tasty drippings are caught in the twists of the wrapping. I'd like to try this, but I think it will be in a flat pan with a tight top. Is there lo-salt taco seasoning? - 1/14/09

I've made my own variations of this with black beans, corn, bell pepper, and a dab of BBQ sauce. Qucik easy and the chicken is VERY moist. - 1/14/09
