Sunshine Rice

Ingredients
1 1/2 tablespoons olive oil 1 1/4 cups finely chopped celery with leaves 1 1/4 cups finely chopped onion 1 cup water 1/2 cup orange juice 2 tablespoons lemon juice dash hot sauce 1 cup long-grain white rice, uncooked 1/4 cup slivered almonds
Directions
1. Heat oil in medium saucepan. Add celery and onions and sauté until tender, about 10 minutes.
2. Add water, juices, and hot sauce. Bring to a boil. Stir in rice and bring back to a boil. Let stand covered until rice is tender and liquid is absorbed.
3. Stir in almonds. Serve immediately as a side dish for a fish entrée.
Yield: 4 servings--Serving Size: 1/3 cup

Made a few changes to make it yummier and healthier:
Added frozen peas, carrots, green bell peppers, and red pepper.
Used brown rice instead of white
Fried Super Firm Tofu chunks in olive oil and Cajun Seasonings and added it to the mix (to replace fish, since I'm vegan)

I love this! I just fried the rice in the oil with the onion and celery after they softened. Then turned down to low and covered for 20 minutes after putting in the liquid. I think people are confused by the directions a bit. I will try brown rice next time, but this is fantastic rice!! - 2/11/08
