Spinach-Feta Personal Pizza

Ingredients
1 8 inch flour tortilla2 tablespoons pizza sauce1 cup Fresh Express Baby Spinach 1 sliced Roma tomato1 tablespoon feta cheese2 tablespoons low fat mozzarella cheeseSliced black olives (optional)
Directions
1. Turn on oven broiler.

2. Spray cookie sheet with spray margarine and place tortilla on sheet.

3. Toast tortilla lightly on both sides under broiler.

4. Top tortilla with sauce, spinach leaves, and tomato slices.

5. Sprinkle on feta cheese and mozzarella cheese.

6. Place under broiler until cheese melts.

7. Top with optional olives.

Serving size: 1 tortilla

    I tweaked this by using ready made Trader Joes Whole Wheat Pizza Crust (120 cal) and low fat feta (50 cal/T). I also added chopped canadian bacon, only 20 calories per slice. No one knew this was "diet" pizza, and better yet, the calories were reduced to 200 per mini pizza! - 1/31/09

    It's hard to find a flour tortilla with fewer than 300 grams of sodium. A corn tortilla has 5 to 25. I don't know what is in white flour, but it is a big difference. And Paul Newman pasta sauce has the least sodium, too. - 12/14/08

    I make this but use a "heart healthy" whole wheat pita (60 calories only) instead of the tortilla. Just pop it in a pie pan, broil till the cheese melts...Great lunch! - 7/17/08

    this has become a staple for me. it has morphed into a yummy veggie concoction that is easy and oh so flavorful. i use mild peppers, onion, green pepper, and any other veggie that strikes my fancy at the time. i use plain tomato sauce and sprinkle pizza seasoning on. real quick. real good:) - 10/31/08

    I tried this yesterday for dinner. Very easy to make and tasted really good and was filling. I used a whole wheat tortilla and added some onion and bell pepper too. The feta really makes it tasty. Definitely a keeper and one that you can build on by adding different ingredients. - 10/24/08

    Great recipe! Easy and fun for the kids. We don't like tomato so we opted out for those, but loaded the tortilla with plenty of spinach and sauteed onions. The kids got to put turkey meatballs on theirs. One was enough with a small salad. - 4/24/09
