Cilantro lime rice

Ingredients
2 tbs cilantro.5 tsp salt1 tsp butteri lime1 cup basmati rice1-2 cups water
Directions
melt butter in 2 qt pot over low heat. add lime juice and rice and stir for 1 min. Add water and salt and bring to rolling boil, then cover and reduce to simmer for 25 mins or until rice is tender. add cilantro and fluff with fork. Makes 4 servings.

    I thought this was just ok. It was pretty bland on its own, but went well with a chicken dish I made. Also, I had to cook it much longer than the stated 25 minutes. It was more like 45 minutes before it was done. - 4/17/09

    I wasn't sure how much lime to put in so I putin 1 tablespoon and it came out really nice. This is an excellent side dish. - 1/19/09
