Easy Microwave Quiche

Ingredients
1/3 cup Shredded mozzarella cheese(lo fat)1 tbs Finely chopped green onion (with top)2 Eggs1/3 cup Skim Milk1/4 tsp Salt6 Drops red pepper sauceChoice of filling:3 tbs Chopped zuchini4-5 Broccoli florets4-5 Spinach leaves2 tbs Finely chopped, fully cooked smoked ham / smoked turkeyYou can add any veggies/meat you like For crust:4 Marie biscuits/ Graham crackers/ 4 tbs breadcrumbs2 tsp margarine
Directions
For the crust:
1.Spray baking tray/dish with cooking spray
2.Place breadcrumbs or finely crumbled crackers into a medium bowl.Fold in melted margarine.Mix well.
3.Line the baking tray with the crust mixture.Flatten with back of spoon.
4.Microwave at HI for 2-3 minutes or until the crust becomes hard.

For the quiche:
1.Sprinkle cheese, onion and any veggies you like onto crust.
2.Beat eggs,milk,salt and pepper sauce with fork in a bowl.Stir in ham.
3.Pour mixture onto crust.
4.Microwave uncovered on medium heat (385 watts) until warm, 2 to 3 minutes,stirring after 1 minute. Microwave
another 2 minutes.
Microwave uncovered until center is almost set,2 to 3 minutes.
5.Serve warm.


Serves 2. Ideal for brunch or as a side dish with soup or salad.

Variation: You can make it low carb by omitting the crust altogether and making it a crustless quiche.

    Yum! I threw this together this morning before work. Used 1 whole egg and 3/4 cup egg whites. Added ham, fresh spinach, a spoonful of salsa, red/green peppers and did not use the crust. It was tasty & filling. Since I didn't use the crust and used egg white for an egg, I ate the entire thing. - 9/14/11
