Rainbow Trout in Orange Sauce

1 1/4 cups fresh orange juice2 tbsps + 1/4 cup all-purpose flour1 tbsp unsalted butter4 (6 oz) rainbow trout fillets
1. Whisk together the orange juice and 2 tablespoons of the flour in a small bowl.
2. Heat a small saucepan over medium heat. Add the butter and onion and cook, stirring occasionally, until the onion is translucent.
Add the orange juice mixture and cook, stirring occasionally, until the sauce thickens and turns creamy, 8-10 minutes.
3. Meanwhile, heat a nonstick skillet. Dredge the fillets in the remaining 1/4 cup of flour, then spray the fillets with nonstick spray. Put in the skillet and cook until browned on the outside and just opaque in the center, 2/3 minutes on each side.
Spoon the sauce onto 4 plates and top each with a fillet.
