Ingredients
2 - 15.8 oz cans great northern beans, drained1 - 10 oz can Ro-tel Original Diced Tomatoes and Green Chilies1 cup onion diced1 cup tomato diced1 clove garlic chopped2 Tbsp olive oilCilantro for garnish
Directions
Heat olive oil in medium sauce pan. Add onion and sautee until transparent. Add garlic, beans, Ro-tel and tomato. Simmer 15 minutes. Garnish with Cilantro. Makes 6 1 cup servings

    I simplify it by just heating up the black beans with salsa, but it's the same basic idea. I then pour it over my eggs in the morning. Very good! - 3/9/11

    Looks good. We don't like green chiles so I'm going with Italian-style tomatoes and will top with basil instead of cilantro. - 6/30/09
