Quiche Cups

Ingredients
10 oz. frozen spinach3 eggs (or liquid substitute)3/4 cup mozzarella cheese1/4 cup carrots, chopped or diced1/4 cup yellow peppers, chopped or diced
Directions
Heat oven to 350 degrees. Line muffin tins with foil liners. Spray liners with cooking spray.
Thaw spinach and squeeze out all excess liquid.
Combine all ingredients in a medium bowl.
Put equal amounts of veggie mixture into each liner.
Bake for 20 minutes or until knife inserted comes out clean.

Cups can be frozen in snack size bags and reheated - remove from foil liner before freezing.

    I have tried these and they are good and you have breakfast for a whole week, however I would cut down the spinach with that much you can't taste any other flavors and it is a little chewy, replace with different veggies - 3/14/11

    Great idea.....a helpful alteration might be to cut out one of the egg yolks and use 2 eggs w/ two egg whites...also, might consider using no-fat feta as the cheese, to "lean it down" even more.....and experiment with spices....I put garam masala in my eggs quite often. Delish! - 3/14/11
