Cod (fish), 2 filletBrown Rice,cooked, 2 cupsRed Bell Peppers, 1 cup, choppedSnap peas, 1/4 cupLeeks, 1/2 cupLemon Juice, 1 lemon yieldsWhite Wine, 1 fl ozButter, unsalted, 1 tbsp
Layout sheet of parchment paper about twice the length of a sheet pan on a sheet pan.
Place fish on paper, surround with rice, cover with vegatables. Add butter pieces, dash of wine and juice of one lemon.
Salt and pepper to taste.
Fold over remaining parchment paper, roll edges and stable shut.
Bake at 425 for 30minutes.
