Megan's crab cakes

Ingredients
2 cans Bumble Bee white crab meat2 cans Bumble Bee lump crab meat20 Zesta saltine crackers, crushed1 rib celery, minced (about 1/4 cup)1 shallot, minced (about 1/4 cup)1/4 green pepper minced (about 1/4 cup)2 T. stick margarine2 T. light tub margarine1/4 c. egg beaters1/4 c. lite mayo1/4 t. cayenne pepper1/4 t. black pepper1 t. mustard powder1 t. old bay seasoning1 t. dried parsley
Directions
saute the veggies in melted butter until softened.
Remove from heat and combine with the crab and crackers.
Add the spices and mix well.
Combine the mayo and egg in separate bowl and then mix into the crab mixture.

Form into 8 patties and place on greased cookie sheet.
Bake at 375 for 15 minutes, turn over, and bake an additional 10 minutes.
