Tuna Salad with Beans

Ingredients
1/4 cup chopped red onion3 tablespoons cider vinegar3 tablespoons lowfat mayo1 tablespoon lemon juice1/4 teaspoons ground black pepper1 6 oz. can water-packed tuna1/2 diced cucumber1 15 oz. can kindey beans, rinsed and drained
Directions
Combine oneion and cider vinegar in a small dish and let stand for about 5 min.
Meanwhile, mix mayo, pepper and lemon juice in a meduim bolw. Add tuna, cucumber and beans to the mayo mixture. Drain vinegar from onions and add them to the bowl. Mix well to combine. Serve over mixed greens. Makes 4 1/2 cup servings.
