Quinoa, Black Bean and Corn Salad

1/2 cup uncooked quinoa2 cups frozen sweet corn1 - 15 oz. can black beans, drained and rinsed1 large red pepper, chopped1 cup cherry tomatoes, chopped1/3 cup cilantro, chopped4 green onions, sliced, using as much greens as possibleDressing:2 Tablespoons extra-virgin olive oil2 limes, juiced2 Tablespoons ground cumin1-2 teaspoons Tabasco sauce
Makes 6 servings
Rinse quinoa until water is clear. Cook, uncovered, in 1 1/2 cups water until water is absorbed and seed is tender. Set aside to cool while preparing rest of salad.
In a large bowl, combine the frozen corn, black bean, chopped red pepper, chopped cherry tomatoes, green onions, and cilantro.
In a small bowl, whisk together the dressing.
Add the quinoa and dressing to the large bowl and toss to combine.

Quinoa is a very small pearl like grain. It's higher in protein than a lot of grains.
