Chicken and Broccoli Lo Mein

2 chicken breasts, cut into small pieces4 cups cooked spaghetti pasta1 cup fresh mushrooms1 tbs. olive oil1 large onion (about 1 cup chopped)2 cups fresh chopped broccoli2 cloves garlic, minced2 tsp. minced fresh ginger3 tbs soy sauce1 tbs rice vinegar1 tbs ketchup1 tsp sesame oil
Heat olive oil in a large deep pot. Add chopped onion, mushrooms, garlic and broccoli. Cook until the chicken is no longer pink. In the mean time, whisk together the remaining ingredients. When the chicken is done, add the liquid to it. Add cooked spaghetti noodles. Serve immediately. Serves 4.
