1 Fillet Salmon3 Clove Garlic, Minced2T Lemon Juice3.5T Light Miracle Whip1 Dash of Old Bay Seafood Seasoning4T Lawry's Baja Chipotle Marinade1Tsp. Olive Oil
Preheat the oven to 325 degrees. Add olive oil to the baking pan. Spread the baja marinade on the Salmon and let it marinade for up to an hour. Once the fish is marinaded, mix together the Miracle Whip, lemon juice, garlic, and Old Bay Seafood Seasoning together in a bowl. Place the Salmon in the oven with the baking dish covered with aluminum foil. When the fish starts to flake, spread the Miracle Whip mixture over the top. Bake for an additional 5 minutes and serve.

Awesome! Loved the smoky chipotle flavor with the tangy miracle whip mixture. I poured the marinade over the salmon while it cooked, and served with artichokes (although asparagus would have been my first choice, my store was out). Delish - definitely my favorite way to have salmon! Thank you! :) - 5/13/07

Will make this again. A little 'grown up' for the kiddo's, but I enjoyed the different take on salmon. The rec. doesn't say low long to bake it, so did 30 min., my filets were about 1 in. at the thickest part, turned out perfect. The lemon-mayo mixture would be great on other fish too! - 4/27/07
