Grilled Shrimp Skewers

Ingredients
Marinade:2 cloves garlic, minced1 tsp lemon zest2 tbsp olive oil1/4 cup orange juice1/4 cup finely chopped fresh cilantro1 tsp chili powder16 jumbo shrimp, peeled and deveined
Directions
Combine ingredients in a large freezer bag; shake for 1 minute. Refrigerate 1 hour.

Skewer shrimp and grill over medium-high heat (or broil) until pink (about 2 minutes per side).

Serve with pineapple-corn relish (separate entry)

    I made more shrimp, so I increased the amounts. Instead of orange juice I used half as much lemon juice, squeezed one lime on the shrimp, used 3/4 of the amount of cilantro, and instead of the chili powder used 1/2 tsp of cayenne pepper. They were great! - 1/15/12
