Ingredients
Directions
Clams - 1 can, 142g / 5oz - drained, reserve liquidOlive oil - 1 tspGarlic - 1-2 cloves, mincedSpinach - 1/2 cup cooked, or about half a pound of fresh spinachPepper, a dash or twoYour favorite pasta (Not included)grated Parmesan cheese (not included)Optionally, some sliced tomatoes make a great addition (not included)
Start boiling water for pasta and prepare ingredients. The sauce can be prepared in the time it takes to cook dry pasta, so unless you're using fresh, start the pasta before the sauce.
The spinach can be cooked either by boiling it with the pasta or by thawing if frozen and sauteing with the other ingredients. I usually toss in chunks of frozen spinach once the pasta has been cooking for a few minutes and is close to done. If using fresh spinach, add it when the pasta is basically done, return the water to a boil, and it should be done.
Heat olive oil over medium-high heat, and saute the garlic for a minute or two. Add the clams, and about 3tbsp of the reserved clam juice (or water). Add spinach if sauteing. Cook over low-medium heat for about 2-3 minutes. If using tomatoes, add to pan just before draining the pasta. Season with pepper. Toss with pasta (and spinach if boiling).
