Simple Seafood Stew

Ingredients
1/2 cup chopped onion1/2 cup chopped celery1/2 tsp. olive oil2 cups water1 can (14.5 oz.) diced tomatoes (or about 2 cups)2 Tbsp. ketchup OR 2 Tbsp. cocktail sauce if you like it more spicy1/2 tsp. salt1/2 tsp. curry powder1/4 tsp. Tabasco Sauce6 oz. raw shrimp, shelled and deveined6 oz. bay scallops6 oz. orange roughy, cut into bite-size pieces
Directions
Makes about four 1 1/2-cup servings.

In a 2-qt. saucepan heat the olive oil; add celery and onions, stirring to coat. Turn heat to medium-low, cover pot and let cook about 5 minutes.

Add water, tomatoes, ketchup, salt, curry powder, and Tabasco. Bring to a boil. Reduce heat to low, cover and let simmer for 30 minutes.

Add shrimp, scallops, and fish to pot. Let simmer another 10 minutes.

I think this is yummy served over a scoop of rice. (Not calculated in the nutritional values.)
