Cocoa Dusted Almonds

Ingredients
Almonds (whole) - 3 cupsButter, unsalted - 1/3 stickSplenda - 5 tsp (or to taste)Unsweetened cocoa powder - 1/4 cup
Directions
Preheat oven to 350, and spray baking sheet with non-stick spray.

Melt butter in the microwave

Put almonds, Splenda, cocoa powder and butter all into a gallon size bag and shake well until almonds are completely coated.

Pour the mix out onto the baking sheet and bake for approximately 10 minutes. Let cool and enjoy!

(Variation - instead of cocoa powder, replace with cinnamon for cinnamon sweet almonds! Also works well with pecans - or whatever your favorite snacking nut may be.)

Depending on how sweet you prefer this to be, you can adjust the Splenda to taste without much impact to the overall nutritional information.

    This was so fast and easy! Just don't try to eat them before they cool properly. We are doing Atkins diet and this was a great solution for us, as we still want to have deserts every day :)) - 11/19/11
