Vegetarian Spaghetti with Arugula, Tomato & Feta

Ingredients
1 package baby arugula prewashed salad mix4 cups cooked whole wheat spaghetti1 can Italian diced tomatoes-drained2 tbsp olive oil1/2 cup feta cheese (any variety the med. seasoned is really good in this)1 tbsp black pepper-or to taste1 tsp kosher salt
Directions
Cook pasta according to package directions, drain and set aside.
Add oil to a large non-stick pan and heat on med-high heat. Add arugula and kosher salt.
Stir argula to wilt.
Add the tomatoes and cook for a minute, then add the feta cheese, pasta and black pepper.
Cook while stirring to mix flavors and melt down the feta for about another minute.

    I sauted finely chopped garlic in the olive oil before adding the arugala and used the plain diced tomatoes. I added the pepper and some fresh Italian spices before adding the feta and pasta. - 3/8/09

    I use garlic in any pasta I make.In this recipe I mashed up some roasted garlic and coated the pasta with it and then added the remaining ingredients....Chef Jim

    I love this but I skip the tomato and just do the feta, a tbs. of chix/veggie broth and a splash of the pasta water...also a teaspoon of olive oil for my "mufa"'s - 3/8/09

    This is pretty tasty but I admit I made some modifications. Pureed 1/2 cup basil with 3 cloves garlic and 1/4 of the tomatoes in a blender then added that to everything else. Only used 1 Tbsp olive oil. I'll make this again but will look to add a bit more flavour somehow. - 6/20/07

    I used rainbow spiral pasta in lieu of whole wheat, mixed arugula and spinach and added a lot more feta cheese. This one was quick, easy and delish! - 10/31/11

    This was fantastic, although I didn't make it exactly the way the recipe was written. I used an arugula/spinach mixture, fresh tomato and added minced garlic and Italian seasonings. I didn't have any feta on hand so I used grated parm and just a dash of half and half for creaminess. Delicious! - 3/24/11

    I think I will try with fresh tomatoes next time because I just don't like the canned tomato taste sometimes. I think I also needed to cook the feta in a bit more because it didn't really melt. - 12/1/10

    Definitely a keeper. Added Italian Seasoning since I only had non-seasoned tomatoes. Also added in a pinch of cayenne pepper for a little kick. Think I'll try some flavored feta next time. - 3/29/14
