Ingredients
2 oz. deli sliced corned beef, thinly sliced1 oz. reduced fat swiss cheese, sliced1/4 c. sauerkraut, jar or bag, rinsed2 T. fat free 1000 Island dressing1-Arnold Sandwich Thin Bun Seedless Rye1 T. Smart Balance butter spread
Directions
Preheat a skillet or griddle pan on medium. Lightly spead the " butter" on one of sandwich thin, place on skillet, buttered side down. Top with 1 slice of swiss cheese, 1/2 the sauerkraut and 1 T. of 1000 Island dressing. Add the sliced corned beef, the remaining sauerkraut, 1000 Island dressing and the remaining swiss cheese. Top with other half of sandwich thin and butter on the outside. Grill until both sides are golden brown about 10 minutes. Serve hot.

    Corned beef round, thinly sliced (rather than brisket) is a leaner option also. A FYI, I would never rinse sauerkraut because it removes most of the flavor. I would suggest to simply drain well. - 4/10/16

    I haven't been able to find the Arnold rye sandwich thins but I used regular rye bread & turkey pastrami instead of corned beef. It is fantastic! Love a good Reuben!!! - 8/12/13
