1 egg yolk2 tbsp lemon juice4 tbsp light butter3 whole grain english muffins6 slices bacon, cooked3 eggs, poached
Melt butter, add lemon juice (more to taste if you like).
Whisk in the egg yolk (be careful here not to add it to butter that is too hot or it will curdle!) Cook, stirring constantly until thickened. Serve immediately over.....
