Cilantro-less Pineapple Salsa

Ingredients
1 sm. clove garlic1/2 med. sweet onion1 sm. jalapeno pepper, seeded1 20 oz. can crushed pineapple in juice, drained, juice reserved1/2 mango1 T. brown sugar1 sm. (1.5 oz) box raisinsfresh mint
Directions
Place onion, garlic, and jalapeno in bowl of food processor; process until chopped fine. Add mango and pulse until chopped to desired size. Add drained pineapple and brown sugar. Stir in raisins and finely chopped mint. Refrigerate for 2 hours or overnight.

Makes approximately 8 half-cup servings.
