Spinach Souffle Casserole

Directions
10 oz. package frozen spinach, thawed and drained2 cups lowfat cottage cheese1 cup lowfat cheddar cheese, grated2 tbsp onion,chopped4 egg whites
Mix all ingredients, pour into loaf pan sprayed with nonstick cooking spray and bake at 350 degrees for 45 minutes.
Slice and serve!

TAMOSQUITO
I added a bit of garlic powder and black pepper to mine before baking. I found it to be tasty, but a bit too salty. I did also find it a bit watery although I squeezed out the spinach. Next time I'll try draining the cottage cheese - maybe that'll help with both the salt and water. - 8/25/08
