Vegetarian Flavourful Split Pea Soup

Ingredients
6 cups vegetable broth or 6 cups water and 3 cubes Vegetable Bouillon (McCormick)2 cups dried green split peas, rinsed1 medium onion, chopped1 cup chopped carrots2 celery ribs with leaves, chopped2 garlic cloves, minced1/2 tsp dried basil1/2 tsp dried marjoram1/4 tsp ground cumin1/2 tsp salt1/4 tsp pepper5 tbl shredded carrots
Directions
In a large saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until peas are tender, stiring occasionally. Add salt and pepper; simmer 10 minutes longer. Cool slightly. In small batches, puree soup in a blender; return to the pan. Heat for 5 minutes. Garnish with shreded carrots. Yield: 7 servings.

    I omitted the salt and used white pepper, used Better Than Boullion Vegetable Base, cooked in slow cooker for 8 hours, no need to puree. Will make often. - 2/10/10

    Very tasty and filling. I prefer to extend the cook time to 2 hours and skip the pureeing. I just happen to think a chunkier texture is more satisfying and keeps me feeling full longer since my body has to work a little harder to digest it. Very quick and easy to prepare.     Excellent and delicious recipe!!! Only change was to use chicken bouillon instead of vegetable (out of it). Pureed 3/4 of recipe and left the rest whole. Didn't need anything else added to it! - 10/9/11

    I made this, but just used water instead of broth or bouillon. I also added a tiny zucchini and left out the salt, but I otherwise followed the recipe to the T. I ended up with 8.5 cups (8.5 servings) at 79 calories per serving. It was pretty good and so low calorie, I will make it again. - 2/5/11

    Like some others, I left out the salt as well. It really doesn't need it. I didn't puree it either, but hubby and I both enjoyed it. I'll definitely make this one again. - 12/11/10

    I didn't have marjoram so I used Oregano. Very good flavors in this soup. I only pureed about 3 cups of it and left the rest chunky. I like a chunkier soup rather than a thick paste. My husband and I both liked it. - 11/15/10

    Awesome soup - I skipped the salt and used low sodium Better than Boullion and it had plenty of flavor, still! I just pureed part of it, so it's good and thick, but still has chunks of veggies in it. Great soup, will do this again! - 11/9/10

    Oh, and I precooked three slices of turkey bacon to put in the soup while it simmered... I really think that was probably empty calories because I don't think it flavored the soup all that much. - 2/15/10

    I threw it in the crockpot and used homemade veggie broth, good solution for those of you worried about sodium. But taste wise the salt really helps. I ended up adding garlic salt and pepper. - 2/14/10
