Vegetarian Flavourful Split Pea Soup

6 cups vegetable broth or 6 cups water and 3 cubes Vegetable Bouillon (McCormick)2 cups dried green split peas, rinsed1 medium onion, chopped1 cup chopped carrots2 celery ribs with leaves, chopped2 garlic cloves, minced1/2 tsp dried basil1/2 tsp dried marjoram1/4 tsp ground cumin1/2 tsp salt1/4 tsp pepper5 tbl shredded carrots
In a large saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until peas are tender, stiring occasionally. Add salt and pepper; simmer 10 minutes longer. Cool slightly. In small batches, puree soup in a blender; return to the pan. Heat for 5 minutes. Garnish with shreded carrots. Yield: 7 servings.

Very tasty and filling. I prefer to extend the cook time to 2 hours and skip the pureeing. I just happen to think a chunkier texture is more satisfying and keeps me feeling full longer since my body has to work a little harder to digest it. Very quick and easy to prepare. A new favorite! - 1/28/14

I made this, but just used water instead of broth or bouillon. I also added a tiny zucchini and left out the salt, but I otherwise followed the recipe to the T. I ended up with 8.5 cups (8.5 servings) at 79 calories per serving. It was pretty good and so low calorie, I will make it again. - 2/5/11
