Mini Cheesy Meatloaves

Ingredients

8 oz extra lean ground beef1 small egg 1/2 cup chopped fresh onion1/2 cup rolled quick oats (dry)4 tbsp ketchup2 tsp yellow mustard2 tbsp brown sugar barbeque sauce1 oz marbled cheddar cheese (cubed into 6 tiny cubes)
Preheat oven to 375.
In medium mixing bowl, add all ingredients EXCEPT for cheese. Mix well.
Drop beef mixture by spoonfuls into 6 ungreased, unlined muffin tins.
Place 1 small cube of cheese into center of each mini-meatloaf. Press down.
Bake in oven for 30 minutes.
Serves 6.

I made this tonight for my fiancee and two friends. Everyone loved it! My fiancee and one friend love meatloaf and they loved it even with the oatmeal...and my girlfriend and I loved it and we're not usually big fans of meatloaf. Definitely couldn't only eat one though. :) YUM! We will definit - 2/8/09
