Introduction

Inspired by watching "Jamie Oliver's Food Revolution" - I realized part of his problem with getting the kids to eat his food is that it didn't look enough like what they were used to, so I came up with this healthier twist on a lunch-room classic.

Ingredients

    1 Organic Whole Wheat English Muffin (I use the Whole Foods 265 brand, but any 140 calorie muffin or roll will keep the calorie count identical.)

    1 organic chicken thigh, bone & skin removed (can substitute any meat for this, but portion of meat selected should be approx. 80 calories to keep the calorie count the same.)

    2 tablespoons of mild salsa. (I use the Amy's Kitchen brand, which is 10 calories per 2 tbsp and is organic.)

    1 slice (equivalent to 1 ounce) of Mozzarella. (Again, I use the Whole Foods 365 brand, which is 80 calories per slice.)

Directions

Place chicken in skillet. Cook 5 minutes on each side on high heat. When cooked, chop chicken up into small pieces.

Cut english muffin in half. Lightly toast english muffin.

Place 1 tablespoon of salsa on each half of english muffin. Take chopped chicken and divide evenly between each half. Cover each with 1/2 ounce of mozzarella cheese.

Place muffin in toaster oven or microwave until cheese melts. Enjoy!
