Introduction
I threw this all together in my slow cooker based on a few different recipes I had seen and what I had on hand in the kitchen. Very healthy, low calorie and definitely vegan! Ingredients

2 cups Bok Choy
1 and 1/2 cups Green Cabbage
2 stalks Celery
2 cups Black Beans
3 cups Leeks
1 cup Carrots
1 small onion
2 cups Organic Vegetable Broth
6 cups water
Miso to taste
Directions
Cut and chop up all of your vegetables and combine everything except the Miso in your slow cooker with the water and vegetable broth. Turn on low and cook for about an hour or until your desired tenderness.
Add about 1 TBSP of Miso to every 1 cup of soup or more or less to taste. I will be keeping this soup in my fridge and eating through out the week so I will be adding the Miso each time I eat it (not all at once).
You can also add some noodles to this soup or vary the types of vegetables you use.
Will make about 20 1 cup servings
