Ingredients

Olive Oil, 2 tsp
Onions, raw, 1 medium (2-1/2" dia) diced
Garlic, 6 cloves chopped
Dash of pepper
Salt, 1 tsp
*Ground Cumin seed, 1 tbsp
*Ground Coriander leaf, dried, 1 tsp
Carrots, raw, 1.5 cup,diced
Red Lentils, 1 cup
6 cups of Pacific Natural Foods Organic Low Sodium Vegetable Broth
*Brown Rice, medium grain, .5 cup
Lemon Zest
1/4 cup freshly squeezed lemon juice
Directions
Pre-heat 4-quart pot over medium heat. Saute the onions in the olive oil for about 4 minutes or until translucent. Add the garlic, pepper and salt. Saute for another minute. Add in the spices.
Add in the carrots, rice, lentils, zest and vegetable broth. Cover the pot and bring to a boil. Reduce heat and immer for about 40 minutes or until rice is cooked and lentils are creamy. Stir occasionally to prevent bottom from burning. Add lemon juice before serving. Taste for salt and seasonings. Makes 4 good-sized servings.
