Ingredients

    Eggs, 2 large
    Buttermilk 1/8 cup (optional)
    Butter 1 Tbsp
    Cheddar Cheese 1oz (or swiss, or mozzarella, or your favorite)

Directions

Scramble eggs with buttermilk vigorously until slightly fluffed/and bubbly to lighten the mixture. Add cheddar or your favorite cheese cut into small (1/8-1/4) inch cubes. Pour into hot skillet in which butter has melted and is just bubbling and boiling, then turn pf heat after pouring in the egg mixture and cover. Open to stir around 3-4 times over 3 to 5 minutes until the mixture is just firm.

Nutrition Tip: Avoid browning. Overcooking and drying out protein rich foods destroys some of the essential amino acids (lysine, arginine) and creates compounds that your kidney must eliminate.

    I just made this, I thought it was going to be too thick with the buttermilk. However, they turned out great. It was very fluffy and yummy, I would recommend using ketchup to compliment the competing flavors in this recipe. - 4/11/16
