Introduction

Ingredients

2.5 cups plain white flour
200 ml warm fresh full cream cow's milk
120 grams white sugar
0.25 cup vegetable oil
1 tablespoon yeast (instant)
1 Egg (medium)
0.25 teaspoon cardamon powder
Directions
1. Mix all the ingredients together and beat at a low speed for 10 minutes. Cover and leave to rest in the same bowl for 5 minutes.
2. Divide the dough into 5 equally sized portions
3. Shape the portions into smooth balls and place on a lightly greased tray.
4. Keep the flat balls covered for about 15 minutes
5. Flour a working surface and further flatten each ball with a rolling pin, to make a circle of approximately 7.5 inches across
6. Cut a circle with a sharp knife into 4 equal traingular pieces and place on a lightly floured tray, keeping a gap of about 2 fingers between the pieces.
7. Repeat the process for the rest of the balls. Leave to rise for about 1 hour
8. Deep fry the mandazi in hot oil one at a time over a medium-low heat turning to other side and cook untill golden brown. They should puff up and rise once dipped into the oil. Drain excess oil by placing on a sieve covered with kitchen paper towels.
Nice with Evening tea, or Dinner with Soup
