Ingredients

    1 1/4 cups all purpose flour
    1 cup regular oatmeal (not instant or quick)
    3/4 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    3/4 cup granulated sugar
    1/2 cup packed brown sugar
    1/3 cup butter, softened
    1 1/2 tsp. vanilla extract
    1 large egg
    1/4 cup chopped pecans, toasted
    1/4 cup semisweet mini chocolate chips

Directions

Preheat oven to 350.

Lightly spoon flour into measuring cups, level with a knofe. In a medium bowl, combine flour, oats, baking powder, baking soda and salt. Stir with a whisk, set aside.

Put granulated and brown sugar and butter in a large bowl; beat with mixer at medium speed until well mixed. Beat in egg and vanilla.

Slowly add flour to butter mixture, beating at low speed until just combined. Stir in pecans and mini chocolate chips.

Drop by tablespoonfuls 2 inches apart on a cookie sheet line with parchment paper. (If you don't have parchment, spray lightly with cooking spray.)

Bake at 350 for 10-12 minutes or until edges of cookies are lightly browned. Cool completely.

Yield 36 cookies; serving size 1 cookie
