Introduction

If you love pumpkin pie but could do without the crust, here's a bar recipe for you! This recipe essentially takes the pumpkin pie custard and puts it on top of a cookie crust. Ingredients

    Butter, 1 stick
    Brown sugar, 1/2 c
    Oats, 1/2 c
    Whole wheat pastry flour, 1 c
    Pumpkin, 1 15oz can
    Evaporated nonfat milk, 1 13oz can
    Milk, 1/2 c
    Cornstarch, 1/4 c
    Cinnamon, 1 tsp
    Ginger, 1/2 tsp
    Nutmeg, 1/4 tsp
    Cloves, 1/4 tsp
    Salt, 1/2 tsp
    Sugar, 3/4 c

Directions

Cut butter into flour, oat and brown sugar mixture. Press into greased 11x7 pan and bake at 350 for 15 minutes. Meanwhile, mix pumpkin, milks, spices, salt, sugar and cornstarch with a whisk. Pour pumpkin mixture into baked crust and bake for another 45 minutes or until custard is set.
