Ingredients

1.5 lbs chicken breast, cut into strips
2 green onions, thinly sliced
1 can pineapple tidbits, with juice
0.25 cup chicken broth
2 tbsp soy sauce
1tbsp brown sugar
0.5 tsp ground ginger
0.25 tsp garlic powder
0.25 tsp salt
0.25 tsp pepper
2tbsp cornstarch
2 tbsp water
Directions
Place the chicken and green onions in the slow cooker
Drain pineapple juice into a bowl, reserving tidbits
Combine broth, soy sauce, sugar, ginger, garlic, salt, and pepper with the juice and pour over chicken
Cook on LOW 4-6 hours or HIGH 2-3 hours
Mix together cornstarch and water, stir into slow cooker and add pineapple tidbits. Cook 20 minutes on LOW

This recipe is great! But I did spice it up! I added more ginger and used chopped garlic instead of powder! I also used 1 tbsp low sodium soy sauce and 1 tbsp low sodium teriyaki sauce. I also added some red pepper flake for heat. I stir fried some veggies and served it with that.

Loved this!I served it over white rice and added sauteed broccoli to the dish to up the veggies.
Also, I never use corn starch to thicken, I have a couple different tricks, but for this recipe I pureed about half a can of carrots w/ some of the pineapple and stirred it in to thicken, upping the veg - 11/13/09
