Introduction

I came up with this recipe because I like black bean/corn salsa, but most are high in calories, this recipe thins it out by adding lots of healthy vegetables. Very good with grilled fish. Number of Servings: 6

Ingredients

    1 cup frozen corn, thawed
    1 can black beans, drained
    3 lg. tomatoes, diced, seeded or one can diced tomatoes, drained
    1 med. onion
    1 cup celery, diced
    1 lg. jalapeno pepper, seeded
    1 lg. cucumber, seeded and chopped
    4 Tb. cilantro
    2 Tb. cider vinegar
    1 Tb. flaxseed or extra virgin olive oil

Directions

Combine first 7 ingredients, in small container combine oil and vinegar, shake well, mix into salad. Serve chilled.

This is also very good with white fish or tuna stirred in. If you like extra spicy food, leave in jalpeno seeds and/or add pepper sauce.
