2 1/2 cups egg substitute
2 cups broccoli, chopped and steamed
1T bacon bits
1 T chives
1/2 cup reduced-fat cheddar
Steam broccoli. While it's steaming, mix egg substitute, bacon bits, chives and salt.
Divide broccoli evenly among 12 regular-sized muffin tins that have been well-sprayed with cooking spray. Pour egg mixture over broccoli, also dividing evenly.
Bake for 15 minutes at 375 degrees F. Remove pan from oven and put cheese over each muffin. Return to oven for another 5 minutes.
Makes 6 2-muffin servings.
