14oz can diced tomatoes
1ea, red, green and yellow pepper
1 can black beans, rinsed
1 onion, chopped
1/2c corn (optional)
1cl garlic, minced
2t chili powder

This was awesome! I did use white hominy ILO Black beans & corn.
A helpful hint Put tomato mixture in bottom, then add chicken cut into strips, then all the vegi's on top. Cook on Low for 3-4 hours. Add a tablespoon of cornstarch & water at the end to thicken. Vegi's are done to perfection! - 4/22/13
Thanks for sharing! We enjoyed it. The dish seemed more like a burrito than a fajita which was fine. I drained the tomatoes, but it was still a little soupy. Actually I'll add a little more broth tomorrow because I think it would make a great soup too. Will definitely make it again. - 2/25/09
