Introduction

Super moist and yummy bran muffin, high in omega 3's and fiber. You can also use 1 cup of applesauce instead of bananas and add one cup of your favorite fruit using the same recipe. Ingredients

    1.5 cup wheat bran
    1/2 cup flax meal
    2 cups shaken buttermilk
    2 egg (beaten at room temp)
    1/2 cup packed brown sugar
    1/2 cup molasses
    2 cups mashed ripe bananas
    4 teaspoons vanilla
    3 cups whole wheat pastry flour (bobs red mill)
    1 teaspoon salt
    1 teaspoon baking soda
    5 teaspoons baking powder
    2 teaspoons cinnamon
    3/4 cup vegetable oil

Directions

Soak all of the wheat bran in buttermilk for 10 minutes.
Beat eggs until light, add sugar and molasses beat well.
Add oil and vanilla beat well.
Add mashed bananas mix well.
Mix flour, flax, salt, baking soda, baking powder, and cinnamon.
Mix wet and dry ingredients together until just incorporated, do not overmix it wil make muffins tough.
Bake at 375 for 22 to 28 minutes or until done with a tester in the middle.
