Introduction

Woman's World Extreme Diet soup. Eat two 2 cup servings per day plus two mini meals and lose up to 6 pounds per week....Maybe, maybe not, but regardless, it is a tasty and healthy meal. Ingredients

    2 Tbs. extra vigin olive oil
    2 Large white onions, thinly sliced
    1.5 pounds bonless, skinless chicken breast
    1 large carrot, shredded
    1 jalapeno pepper with seeds, minced
    2 tsp minced fresh thyme or oregano - 1 tsp if dried
    8 cups fat free chicken broth
    1 15 oz can black beans, drained
    6 cups of baby spinach leaves, packed
    1 15 oz can diced tomatoes
    7 tbs grated parmesan cheese as garnish

Directions

Heat oil in large stgockpot over medium heat. Add onions, cook 10 minutes, stirring occasionally. Add chicken, cook 5 minutes or until chicken is cooked. Add carrot, garlic, jalapeno and thyme, cook 2 minutes more. Stir in broth, increase heat, and bring to boil. Add beans, tomato and spinach, return to a boil. Cover, remove from heat. Serve topped with parmesan cheese. Makes 7 2-cup servings.

    I love this soup it so filling and delicious. I saw the recipein womans world and just had to try it. Was getting ready to post when I saw it had been posted. I have very thin people around me that beg for it. This is quick and wonderful - 3/5/09

    The directions call for garlic, but garlic was not listed in the ingredients...how much garlic does this call for? This sounds really good and I would like to make it tonight! Thanks - 4/10/10

  • Substitute a 15 oz. can of crushed tomatoes for the diced. It infuses the soup with a richer tomato flavor which, combined with the spinach & the spices, gives it a Florentine flavor. No significant change to caloric or fat content, but may increase the sodium a bit. - 1/12/14

  • I have high blood pressure, and this sodium content is more than I should eat in a day--please don't call it "healthy"! However, if made with lo-sodium chicken or veggie broth (better yet, make your own from fresh!), it would fall into that category. Looks good, though. May try it with substitutions - 7/24/13

  • Wonderful. I didn't need this to lose weight. I just wanted to eat something that I knew was healthy. LOVE it. My children arent veggie eaters and they love this soup. I added chopped sweet potatoes and squash. I only used 1/4 of the jalapeno b/c I wasnt doing the diet. Delicious!! - 3/8/10
