Introduction

Ingredients

1 cup onions
4 garlic cloves minced
2 tsp olive oil
1/2 cup grated carrot
1 1/2 tsp chili powder
1 tsp cumin
3 cups cooked black, pinto or kidney beans
2 Tbs mustard (I use brown)
2 Tbs soy sauce
2 Tbs Ketchup
1 1/2 cup rolled oats
salt and pepper to taste (I never add any)
Directions
Saute the onions and garlic in oil for about 5 minutes, on medium low, until the onions begin to soften. Add the carrots, chili powder and cumin and cook on low for 5 minutes.
Mash the beans in a large bowl with a potato masher and mix in the mustard, soy sauce, ketchup, sauteed veggies and oats. Add salt and pepper to taste.
Form into 6 patties and cooked in the same skillet as the veggies for about 5-8 minutes on each side.
Makes 6 patties. If you only want to cook a couple, you can save the mix in a sealed container in the fridge for about a week.
