-Chicken, cornish hens, 2 bird whole
-Cranberry juice cocktail, Ocean Spray Cranberry Juice Cocktail, 1 cup
-Dole, 100% Pineapple, Orange, Banana Juice, 1 cup
-Almond, Raw, Sliced, 0.25 cup
-Sun Maid, California Chopped Dates, .5 cup
-Optional: 1½ apple & 1½ pear, peeled, cored, & chopped
Combine the juices. Place the roasted poultry in a deep pan or casserole dish (I make tinfoil boats for each hen, to keep the smaller pieces of meat from floating away); lay the fruit & nuts on top. Add enough juice to just cover. Place in a 3754° F oven for 30mins; reduce heat to warm and let simmer 15 minutes. Remove from the liquid and serve with some of the fruits & nuts in the juice on the side.
(Calorie readout is a little high, because it's counting all the juice. You will not consume all the juice.)
If your juice doesn't cover the pieces, feel free to baste every 10mins.
