Skinny Chicken Philly Cheese Sub

Ingredients
4 whole wheat hoagie rolls1 pound chicken breasts1 yellow onion, sliced 2 bell peppers, sliced 2 banana peppers, sliced 1 tablespoon white wine vinegar1/4 teaspoon black pepper4 slices provolone cheese
Directions
Preheat grill on high. Place the chicken between two sheets of plastic wrap and flatten slightly with a rolling pin or meat mallet. Remove the meat from plastic. Grill meat until internal temperature reaches 165 degrees, about 10 minutes. Remove from heat and set aside for 5 minutes. Chop meat into 1/2 inch cubes.

While the meat is cooking, heat a large saute pan. Coat with nonstick cooking spray. When the pan is hot, add the onions. Saute on medium-high for 5 minutes, until onions become tender. Add the peppers and cook for 10 more minutes. Add the vinegar to saute pan, stir to scrape up any residue on the bottom of the pan, and remove from heat.

Divide the meat and peppers between the buns. Top each with a slice of cheese. Wrap sandwiches in foil and return to the grill for 2 minutes to melt the cheese.

Slice each sandwich in half and serve hot.

    I sauteed red, yellow, and green bell peppers, mushrooms, and onion. Instead of dicing the chicken, I pan seared boneless skinless chicken breast and then shredded the meat. I mixed the meat and veggies, warmed up a Whole Wheat tortilla added the ingredients and a piece of cheese. It was great! - 6/16/11

    I would not consider this a cheesesteak. It lacks seasoning... Mrs.Dash and if you need salt, Salt Sense. Banana peppers? Eliminate. I opt for onion only but i like lettuce and tomato. Shred Chicken. And coring out the meet of the roll is great thinking! The recipe is a ok starting point though. - 6/20/11

    This recipe was pretty tasty....I sliced the chicken before cooking it, and added some salt, pepper, and oregano. I cooked it on the stovetop instead of a grill, and I added mushrooms to the vegetable mix. The sandwiches were good, and a nice replacement for steak sandwiches. - 8/12/11

    No seasoning! Food has to be good and delicious or we won't eat them. I added Emeril's seasoning. It was too much bread but it was ok. I realize the whole low sodium buisiness but no sodium is just not worth it to me in my life. - 1/30/12

    Recipe says it makes 4 servings, but the cooking instructions only divide it on two buns. I assume that it is supposed to be between four buns. 1 pound of chicken for two sandwiches is a lot. - 1/9/12

    It sounds good gotta try it but switching out banana peppers for mushrooms and adding a little oregano, basil and sprinkle of balsamic to make up for missing salt. the suggestions of whole wheat tortillas is a great one too.

    It would be really nice if the picture would actually resemble the recipe so we know what we are making. The directions say to divide into 'two' buns, it should be 'four'. Other than that, the recipe is very bland but easily changed to suit your needs. - 1/9/12
