Chocolate Zucchini Bread or Muffins

Ingredients
2 c shredded zucchini1 1/2 c whole wheat flour1/2 c cocoa3/4 c sugar subsitute of your choice1 1/4 tsp b. soda1/2 tsp salt1 tsp cinnamon1/2 c fat free yogurt4 egg whites1 tsp vanilla1/3 c mini chocolate chips
Directions

In separate bowl, combine all dry ingredients.
Combine yogurt, egg whites, and vanilla; add to zucchini.
Gently mix dry and wet ingredients together until moistened.
Use 1/4 c to pour into 12 muffin cups.
Sprinkle chocolate chips over tops.
Cook at 350 degrees for 15-20 min.

    I thought these were really good. I don't know if it's because there is no oil, but when using cupcake papers the muffin stuck to the papers and I lost a lot of the muffin trying to separate them. I guess that just means you eat less :) I made both muffins and a loaf, so I liked the loaf better - 7/15/12

    Yummy! And my kids are eating zucchini! I did make a few adjustments, I used vanilla Greek yogurt and cut the sugar to 1/2c. of raw sugar. I also added some ground flax and a bit of water. They turned out great...they are big and filling at 136 calories. Thanks!! - 8/6/11

    I used Greek Yogurt, plain and added a sprinkle of chopped walnuts to the top. I made mine a little smaller and got 18 muffins. As for the sticking to the wrapper, I used foil muffin liners. - 7/31/13

    These are tasty enough that my kids asked for more. My only complaint is that the recipe calls for sugar, but the calories are calculated using Splenda. Using sugar adds nearly 50 calories per muffin. - 5/30/12

    Oops, you are right! I sometimes use splenda and sometimes I use sugar, so I just miscalculated there. I am going more natural with my food lately, so I am trying it out with raw sugar today.

    These were pretty good but - I only put 1/2 cup of sugar (+ 2 tbs)....and it really did need that extra sweetness. Fortunately I put milk chocolate chips on top so that did help. They are a nice texture. Next time, I'm adding coconut milk and topping them with coconut and chips. Should help. - 8/24/11

    Made the muffins...were rich, dense, super moist, chocolatey deliciousness. Everyone went nuts over them! I used honey instead of Splenda (SO bad for you!), I used the dark cocoa powder, & 1/2 c milk chocolate chips instead; 202cal, 3.3g fat, 3.17 chol, 42.2 carbs, 3 g fiber 4.4 g protein ea. - 5/15/16

    Excellent! I added 3/4 cup of sunflower seeds which is 1 tablespoon per muffin. It does add fat, but it is healthy fat. I also mixed the choco chips into the muffin batter. I brought them to work and got rave reviews. I peeled & seeded the zucchini before fine shredding them. - 9/13/13

    Instead of wheat I used oatmeal ground into flour consistency. They came out super moist. I do think Thry need a little more sweetness so I will add honey or agave next time. I also used greek yogurt. Delish! - 7/13/13

    I made these today and they are delicious! Super moist and chocolatey. Texture is a little funky due to the zucchini, but that doesn't bother me at all. I used Greek yogurt and 2 eggs - will try making with Splenda next time to save some calories. YUM! - 9/11/12

    I just made these. They're pretty good, especially considering that they're made only with whole wheat flour. I mixed 1/2 cup regular-sized chocolate chips into the batter, and I'm glad that I did. They would be quite bland without the chocolate chips. - 8/11/12

    This is my new favorite chocolate dessert...you don't feel deprived of any chocolate, and the muffins are HUGE! I am glad I doubled the recipe when I made these...they won't last long! I did use sugar instead of splenda as someone else pointed out, and might have put a few more morsels in..... :) - 1/3/12

    Made these today and sorry to say did not like them :( I found they did not have much flavor to them. The chocolate flavor was not very strong despite all the cocoa powder. If I try these again I will incorporate the chips in the batter and see if that helps some. Nice try though. - 7/30/11

    Fantastic! I didn't have plain fat-free yogurt so I used Yoplait white chocolate-strawberry, the only thing I had on hand. So good! Will make again using Okios Chocolate Greek Yogurt and maybe try other flavors,too. Thanks for a great recipe. - 7/16/11

    I was so impressed by all the comments, so I was a tiny bit disappointed when they came out tasting quite salty. I followed the recipe to the letter. Other than that they were quite delicious. Next time I will leave out the salt. - 8/31/13

    The nutritional information is very misleading. The recipe calls for sugar, but the nutritional information is calculated using zero calorie splenda. I made it with sugar, and no chocolate chips, and it's roughly the same calories. But the muffins aren't great. - 8/30/11
