Finnish Pancakes

Ingredients
2 large eggs1/2 cup milk1/2 cup flour1/8 tsp salt1 Tablespoon sugar1 tablespoon margarin
Directions
set oven to 400 degrees

Put 1 tablespoon margarine in a pie plate. melt in the oven.

While melting margarine, beat eggs and milk together, add salt, sugar and flour.

remove pan with melted margarine, pour mix into pan. Return to the oven and bake for 30 minutes or until puffs up and edges are golden brown.

If desired, you can add sliced apples with cinnamon and sugar. One apple will do the trick!

Enjoy as is or with a little bit of syrup!

    Easy, Yummy, and filling. I made these as the recipe stated, it did look funny with the edges flowing up and the poofing center. My family was hesitant, but once they tasted it....GREAT!!! This is now my pancake recipe for good. I added 1/2 tsp brown sugar and 1/2 tsp maple syrup....mmmmmm good. - 3/1/09

    OMG! This was soooo good! I diced up an apple and sprinkled about 1/2 tbsp cinnamon sugar over the top. But, could be good with a little lemon juice and powdered sugar - like a 'dutch baby miniature' from one of my favorite family restaurants! - 2/19/09

    I'm part Finnish and grew up in a very Finn-heavy area (Upper Peninsula of Michigan). This is a great, easy, and lighter version of what my Mom would make--hers involved a dozen eggs and sticks of butter! Excellent! - 6/21/12

    This was great tasting and easy to make. I suggest getting eggs and milk to room temperature to make it as fluffy as possible. I put the eggs in the microwave on HIGH 15 secs 2X Milk 30 sec. - 1/21/14

    So good! My boyfriend ate a quarter of this in one bite. I mixed the sliced apples with cinnamon and a packet of Splenda before putting it on the pancake prior to baking, then added a little honey syrup before serving. - 4/1/12
