Bison Mini-Meatloaves

1 pound ground buffalo/bison1 large organic egg1/4 cup bread crumbs3 tsp. Worcestershire Sauce2 tsp. Dijon Mustard1/2 onion, diced1/2 cup fresh mushroom pieces1 tsp minced garlic1/4 cup grated parmesan cheesedashes of salt and pepper
Preheat oven at 350 degrees.
In a pan, sautee onion, garlic and mushroom in non-fat cooking spray. Cook until onions are clear.
In a bowl, combine remaining ingredients. Add cooked onion, garlic and mushrooms. In four seperate mini-souffle dishes, mound the buffalo mixture into loaves in each dish.
Cook in the oven for 30-40 minutes or until the meat reaches 140 degrees on a meat thermometer.
Serve in the souffle dishes, or if you prefer, carefully remove the meatloaves from each dish and use the drippings to make a simple sauce/gravy.
