Spicy Garlic Baby Bok Choy

Ingredients
1.5 lb baby bok choy (chopped)1tpsp e.v.olive oil3 cloves garlic, minced1tsp garlic powder (for garlic lovers like me)3tbsp kikkoman lite soy sauce1 tsp crushed red pepper (add more if you like it really spicy)1/5 cup water (or chicken/veggie stock)
Directions
In a large stockpot (deep like the ones you boil spaghetti in) add the e.v.olive oil and heat to medium on the stove. Add garlic and lightly brown.. when browned throw in all of the bok choy and stir around a couple of times. Cover and let cook for about 3 minutes. Open and add soy sauce, garlic powder, and red pepper.. stir continuously for about 2 minutes and add water to make a lite sauce on the bottom of the pan. Stir for 2-3 more minutes or until all bok choy is tender. Serve in a bowl, scoop some sauce out of the pot and pour over for extra deliciousness!

    I could live on this!! I can never find baby bok choy, so I always use the regular. I never add water or stock, because the bok choy gives off so much liquid while cooking, but I also add a splash of rice vinegar instead. Delish! - 1/12/11

    Going to try this tonight. However, on the nutritional info. I question the calcium amount. Bok choy is very high in calcium. Using another listing for bok choy it came out to 22 on the calcium. This was soooooo good! I served mine along with orang honeyed chicken (another spark recipe). Yummy! - 5/12/09

    You can usually get baby bok choi at a local asian market. I find a lot of great spices and items for healthy cooking there and mine beats out supermarket pricing, so I shop there first. Baby bok choi is super easy to grow and a cold weather crop just like spinach. - 3/25/12

    My mom has been telling me to try bok choy for a while now and this recipe sounded a lot like her instructions so I tried it...and another vegetable for my menu planning....NIICE!
