Ingredients
1-15 oz can pumpkin1 cup nonfat milk3 large eggs1/2 cup canola or olive oil1-1/2 cups Splenda2 tbsp cinnamon2 tbsp nutmeg1 tsp salt5 tsp baking powder1 cup soy flour1/8 cup oat bran1/8 cup wheat bran1 cup old-fashioned oats2-1/2 cups flour (white or wheat)2 cups COOKED 7-grain hot cereal 2 cups raisins1 cup peeled, chopped apples1 cup sliced almonds
Directions
Beat together pumpkin, milk, eggs, oil, Splenda, cinnamon, and nutmeg.
Add remaining ingredients and mix until moistened.
Spoon into muffin cups and bake at 400 degrees for 20-25 minutes.
Makes 4 dozen.
Nutrition information: 1 serving equals 1 muffin.
Tips:
-Once cool, lock muffins in airtight containers such as zipper freezer bags to retain moisture.
-May be frozen for up to 6 months in suitable freezer containers.

    i doubled the recipy and added 2 cup whole cranberry sause and a bag of fresh cranberrys instead of the cooked cereal and a 1/2 cup molases mmmm - 10/14/07

    I agree with ASRIFFE about the denseness. I might add extra baking powder, I think. Also, adjust spices down to 1 tbsp each. Hated the Splenda. Think I'd use 1/2 or 3/4 cup granulated sugar in its place the next time. - 9/3/07

    Delicious! I love the addition of raisins and almonds. I couldn't find soy flour so I just substitued more whole wheat flour. A good flavor and not too overwhelming. - 7/29/07
