Baked Banana Blueberry Pecan Oatmeal

Ingredients
4 cups rolled oats 1/2 cup Splenda (sucralose) sweetener2 teaspoons baking powder2 teaspoons ground cinnamon2 cups 1% milk5 medium bananas, mashed4 Tablespoons olive oil2 large eggs2 teaspoons vanillaAdd:1-1/2 cups frozen unsweetened blueberries, thawed & drained1 cup chopped pecans
Directions
Preheat oven to 350º. Lightly coat muffin cups in standard-size tins with cooking spray (or use paper liners). In a large bowl, stir together the oats, sugar, baking powder and cinnamon until well combined. In a separate bowl, combine the milk, bananas, oil, egg and vanilla until well blended. Add the milk mixture to the oat mixture and stir well. Divide the mixture evenly among cups, which should fill to the top. Bake on center rack until toothpick in center tests clean, about 25 minutes.

Serving Size: Makes 22 portions, 1/3 cup each
