Healthy Veggie Pizza on Flourless Cauliflower Crust

Ingredients
1 cup cauliflower, chopped3/4 cup shredded low-fat mozzarella cheese1 egg1 teaspoon dried oregano1/2 teaspoon crushed garlic1/2 cup pizza sauce1/2 cup mushrooms, chopped1/2 green bell pepper, chopped1/2 red onion, choppedVegetable oil spray
Directions
1. Shred cauliflower in a food processor
2. Microwave for 8 minutes
3. Mix in the egg, 1/2 cup of the cheese (save the rest for topping), garlic and oregano
4. Spray a pizza pan with vegetable oil spray and spread with cauliflower/cheese crust mixture
5. Bake in the oven for 10-15 min at 350 degrees
6. Remove crust from oven and top with sauce, mushrooms, onion, bell pepper and remaining cheese
7. Place back in the oven for another 10-15 min

    This sounds interesting and I might try it but I'm curious why everyone is so terrified of foods like pizza crust. I'm a diabetic and even on 1200 calories a day I can have a slice with a salad. I also tried using 70 cal pitas that I found. Crispy and yummy. - 5/29/14

    This is really good (I have made it before using other recipes from other sites, basically they are all the same). BUT it will come out much much better if you bake the crust on parchment on a baking stone. It will be much crispier and less soggy when you put the toppings on it. - 4/22/15

    I use a similar recipe for the cauliflower crust. Best tip I know: after you microwave the cauliflower, put it the cooled cauliflower (don't try this hot) in a kitchen towel and squeeze out the water...it has a lot of water and it will help the crust be less mushy.

    I made this last night and it was suprisingly delicious. I question the amount of cauliflower in the recipe, watching the video there seems to be much more than that and her pizza looked much larger than my 8" diameter one. - 3/27/14

    This was amazing. I did "tweak" it a little. Steamed the cauliflower and then mashed with a fork as I don't have a food processor. Added an egg plus one egg white (I used 1.5 heads of cauliflower), the mozza and also sprinkled in Italian seasoning. Delicious! - 8/26/14

    I intend to try this recipe, but I call bullshit on the video. She used way more than 3/4 Cup mozzarella cheese. (and the hair, and the long sleeves.     I've tried a cauliflower crust before and it was not good. However, if you add some kind of spices with the crust, it comes out much better. No egg needed. OMG! I barely made it through the video but lost it when she took a bite of the pizza. I won't make the mistake of watching her videos again. - 5/27/15

    Tastes Great! It is better eaten with a fork, crust had a cornbread-like consistency. I added more veggies than called for in the recipe, and would add black olives next time.
